Okay! SO, I decided to make blueberry jam for my assignmeny. I figured it would be good with a side of pancakes on a winter morning. Yummm! okay so all I did was place about 2 cups of blueberries into a pot with 1 cup of sugar & 1/4 of a lemon, juiced. That's it. Seriously. The hard part was the jarring. I found another way to do it without a water bath. I washed the jar in hot soapy water, let it air dry for a few minutes then placed it in a oven at 225 degrees F for about 10 minutes to sterilize it. Then I poured my jam in (more like scooped it in) then tightly sealed the lid and wrapped it in a cloth. I sealed it at around 1:50-2 pm, went about my day, went to work & came home around 10:20pm, so about 8 hours. enough time to let the jam set & seal.
When I checked, I couldnt press down on the lid so I knew it was properly sealed. So I opened it up & tasted it. I'm not really a jam person but this tasted pretty awesome! It was sweet yet tart but you could still taste the blueberries. It was so fruity and savoury, the lemon juice probably just brought out the flavour instead of adding sourness. I would call this a success!
